I have to start by redefining your view of orange chicken- I don’t mean the unhealthy yet delicious fried stuff you find at fast-food takeout places. This is one with an Asian flair, but it’s actually healthy and can be made with all-natural ingredients! What it lacks in appearances it definitely makes up for in taste!
Slow Cooker Orange Chicken
Here’s what you need (remember to double if you’re making one to freeze)
1 lb chicken (about 2 breasts)
1 cup green bell pepper finely diced
1 cup carrots sliced
1 cup frozen peas
1 TBSP minced garlic (I love to buy the pre-minced package- so easy!)
1/3 cup orange juice
1 (10 oz.) can mandarin orange slices drained
2 TBSP soy sauce or soy sauce alternative
Dump all ingredients in the Crockpot and cook on low for 4 hours. If you’re freezing a second, dump all in a freezer bag, and defrost the night before you’re ready to cook.
Serve with rice, I like to use the Trader Joe’s fried rice package to make life all the more easy and tasty!
